Benecel™ MX Modified Cellulose is a unique grade of modified cellulose which can unlock new possibilities in food applications. Specifically formulated to excel in meat analogue formulations, Benecel™ MX creates a thermo-reversible gel, making it an ideal ingredient for creating exceptional plant-based products.

 

One of the key advantages of Benecel™ MX is its ability to form a gel at a lower temperature compared to regular grades. This innovative modified cellulose gels at approximately 40°C, providing superior functionality and texture enhancement. With its high viscosity ranging from 37,500 to 70,000 mPa·s in a 2% MC water solution, Benecel™ MX ensures optimal binding and helps formulations hold their shape, even at cold temperatures.

 

Derived from plant sources, Benecel™ MX is suitable for vegan applications, aligning perfectly with the growing trend towards plant-based foods. Its molecular structure, featuring hydrophilic and hydrophobic areas, plays a crucial role in stabilizing fat and water in food formulations. This unique characteristic helps retain moisture in the finished product, resulting in succulent and satisfying textures. Additionally, Benecel™ MX offers the option to replace fat with water, providing formulation and cost flexibility without compromising on quality.
